Timothée Rousselin made the bold bet of leaving everything six years ago to settle in Vietnam. Since then, the Frenchman has started his family and opened a restaurant where you can enjoy spring rolls, one of the country’s most emblematic dishes.

Six years ago, Timothée Rousselin left his job as a restaurant manager in Paris to settle in Ho Chi Minh, Vietnam. Here he raised his family and started his own business alongside his mother-in-law. For the past year, they have been running a restaurant, Luli’s Kitchen, located in the heart of the city. One of the most emblematic dishes of Vietnam is on the menu: spring rolls.
“At first, I just cooked for my family. Then, Timothée really liked my dishes. He then had the idea of opening a restaurant so that I could cook, because it’s my passion”confides Ngoc Trinh, Timothée’s mother-in-law. It’s a family affair because in the dining room, Timothée and his wife Nhung manage the service. “Vietnamese people are extremely connected to their family. It’s a culture that revolves around family and around food”explains Timothy.
The restaurant serves around a hundred seats per day. “The spring rolls are crispy. Instead of using pork or vermicelli like the others, he makes it with chicken and it’s succulent”enjoys a French-speaking guide, a loyal customer. Today, Timothée and his family would not leave this new life for anything in the world.
