In Mont-Saint-Michel, at the end of 2025, the Mère Poulard group decided to sell its biscuit factory. A decision which is part of a vast strategy to refocus on its tourism activities. At the heart of which we find the famous omelette cooked over a wood fire.
The famous pure butter biscuits are not going to disappear. It is the French group “Aux trois cigognes” which is taking over manufacturing. The buyer has undertaken to retain the hundred employees of the biscuit factory, located 30 km from Mont-Saint-Michel, in Maen Roch.
The sale of the biscuit factory will finance a vast investment plan called “Horizon 2030”. In particular, it plans to renovate the historic Mère Poulard inn, where the fireplace is located which is used to cook the most famous omelette in the world.
To promote its cooks and attract new talents, the group also plans in its plan to create an omelette maker certificate in 2026. A profession that today only exists within the Auberge de La Mère Poulard.
