The melon has been on our stalls for a few weeks already, and it takes advantage of summer to flourish. Product in the south and southwest, we know it by its main variety, the Charentais melon. It brings freshness and benefits for health: wealth of water, source of vitamins (A and C) and antioxidants, fibers and few calories.

For the star chef Thierry Marx, the melon is unanimous. You have to know how to choose it and work, or not since it is enough to cut it and taste it with a spoon. It is easily eaten, with all possible and imaginable variations from aperitif to dessert.

“Take the heart of a mature melon, add a little honey, mash in puree and place in the freezer. You will get an absolutely delicious melon granite to serve with a little cottage cheese.”

Several melons already have a protected geographical indication: that of Guadeloupe, that of Haut-Poitou, that of Haut-Quercy. For the past few weeks, the most famous of all, the Melon de Cavaillon has also just obtained its IGP.

For Carole Ly, director of the INAO (the institute which attributes the IGP), this is because of both its terroir, its mode of production and its history since the melon has been linked to Cavaillon since 1495.

“For the IGP, there are conditions on drip irrigation, on crop rotations, on a limited level of phytosanitary treatment with recourse to green fertilizers, all for the most durable production possible.”

The Cavaillon melon is produced in the Vaucluse, the Bouches-du-Rhône, the Var and the Alpes-de-Haute-Provence.

SSURANT: “The best is often the simplest!”
