Near Angers (Maine-et-Loire), Anaïs Masse produces 500 tonnes of lamb’s lettuce salad per year. For three months, she has been working with a new network to sell her products at their fair value. A more equitable remuneration which also allows him to better pay his employees. With the new system, 40% of the sale price is donated to him. The lamb’s lettuce salads are then washed and put into sachets with the destination of large areas.

With fair trade, the 125g sachet of the lamb’s lettuce salad is sold at 1.39 euros, 45% more than a conventional sachet. A higher price because there are fewer intermediaries and a smaller margin for the merchant. Customers do not hesitate to get their hands in the pocket to support producers. In recent years, fair products have been developing on the shelves. In 2024, sales of fair trade products increased 25% in France.
