Christmas and its festive meals, the opportunity to put chocolate on every table, and the truffle remains a great classic. As the holidays approach, if one chocolate stands out on the shelves, it’s the truffle. In a supermarket, customers are easily tempted. An SME has become the world number one in chocolate truffles. In its factory, the truffle paste is made on site: cocoa, milk, a little sugar and natural vanilla. “That’s about four tonnes of truffles per day over 8 hours coming out. Basically, more than a million truffles in 8 hours”says Tony Boddez, industrial director of the Truffettes de France factory. It was a Meilleur Ouvrier de France chocolatier who developed the latest recipe to adapt it to an industrial scale.

The company does not owe its leadership position to chance. To conquer market share throughout the world, the recipe must be adapted: minty for England or fruit for Brazil. “We work closely with marketing, which gives us some trends depending on the country. It was determined that the raspberry flavor was popular for Brazil”shares Clémence Petit, head of Research and Development at Chocmod.

One of the strengths of the SME is to be able to adapt as much as possible to the specifications of its customers. But the creative appetite doesn’t just lie in recipes. You also have to think about the presentation. “For example, for Chinese New Year, we will put our truffles in a lantern that the Chinese particularly appreciate and which they keep as a tealight holder afterwards”illustrates Emmanuel Bois, president of Chocmod. 80% of the company’s truffles, or 560 million, are exported to more than 60 countries.
